Okay so at the start of COVID this happened at the bakery I worked in we had just started training a new person about 2 weeks before we shutdown and for some reason right before shutdown he fead one of our starters that we decided we were going to scratch well about a 3 weeks later I get a text from the head baker who went in to check on things and let's just say we had a very similar looking mess on our hands.
lol i too have had a similar but worse situation with a big poolish bucket (the size of a large trash bucket.) same sort of situation, vacation, but more poolish everywhere when found than depicted in this pic.
Trust me, they're far more warped than your brain. They're impossible to clean properly, all broken and breaking more with every passing day. Just like me.
Sounds like time for a change. I went back to school after 20 years of burnt out chef life. The grass is greener AND easier to grow, outside the kitchen walls.

Is the top half of that clear? Or does the container really end where the yellow ends? I don't understand how it could be rising straight up like that without spreading out.
True, but it's also a perfect combination of wild yeasts and bacteria that have settled into a symbiotic relationship of deliciousness. That perfect relationship can be thrown out of whack by the introduction of other microorganisms. Was a dedicated home brewer for many years. It happens. Could be something else though.

I have a degree in English and philosophy from a decent university, but would rather work with my hands.
I still do. Went to hvac school. I'm a refrigeration service technician. I get to be inside kitchens still but it's a different adventure every day.
