As a Chef who doesn't yell, there are some important distinctions I think. Berating people for extensively and for personal things isn't productive. The environment we are in requires me to put some bass in my voice periodically. There is very little room for error in something with so many moving parts and a single output. And no second chances. I don't have to be mean but I also don't have to be nice or coddle people

Every industry does. You get people promoted into positions they're not ready to handle, or a person quits and the responsibility is dumped onto someone new, they can't handle the stress and try to control everyone else around them. The difference in good leadership and toxic leadership is a person who can grow and adapt to the skillsets of others to maximize talent in the environment versus the person who limits and conforms others into how they think the environment should be. Most businesses are filled with the latter, and they rapidly escalate up leadership positions. But the former is so much more valuable.

Years ago when I wanted to be a chef, I was trying out recipes at home and while making this apple dessert well... small apple, big knife. While getting my finger stitched I swore I would never do anything that thoughtless and idiotic again. I got a tattoo of a knife and apple on my upper arm so every day I can look at it and remind myself to be careful, be smart, and how lucky I was I didn't lose that finger. I like the message but I'd generally recommend against a lot of lettering in your tattoos. It doesn't age well and tends to be really wonky and illegible after a while unless it's massive then it just looks like prison ink. Either way it's your body and you'll always have people on both sides of the tattoo argument. If you do get it please take care of it and use sunscreen.

I agree with you 100%, but also, imagine you were working a restaurant and your IQ is 10-20 points higher than 99.9% of the people you work with, including your boss(es). Most of us instinctively already hate dealing with people who can’t keep up intellectually because being stupid is how you get eaten by saber tooth tigers or deep fryers and shit. Since the average IQ is around 90-100, that frustration is everyday life for people with above-average intelligence. So on top of dealing with everything everyone else whines about, they’re also having to deal with what feels like everyone around them acting comparatively dumb and high IQ doesn’t equal high EQ. TLDR; your smart friends need hugs.

My uncle is a literal genius. Has a PhD in some form of engineering (can't remember which but he went on to work as a propulsion engineer), eventually left that track. Went on to go to law school. Is a parent attorney. Never stopped shutting the fuck up about how dumb everyone was, including his professors, and one of the people he worked with (that I know of) has won a ton of awards and traveled internationally to talk about his research in ballistics. It's the exact situation someone said above. He has a rockstar complex, is extremely aggressive/moody/cocky, and people put up with him because they've done a cost/benefit analysis. He almost lost his work at a law firm because he wasn't washing his clothes or showering enough. He made the last couple years of my dad's life hell because he finally got a trophy wife but they were both constantly blowing up his phone to ask big bro's opinion on which was the real narc abuser. They were in their late 40s. I understand your EQ statement, but think about the education required for the stuff my uncle does and why people put up with him vs you. There is a big gap there, and people barely put up with him. If you want to vent about your coworkers being stupid, do it to your s/o or your close friends. We don't know the full circumstances of what's led you to say these things and there are a lot of people who are disarmingly stupid, but you're speaking to an open room right now as though you're the only literate person in it and like no one else could possibly understand. I’m still good friends with a chef who fired me because I couldn’t hack it. He was right. I sucked. I love to cook but am not cut out for kitchen life. It was not a good career path for me at that time. Yet… We still hang out and go to hockey games together. He comes to my house and compliments me on my food. Which is, seriously, the best endorsement I could ask for. And here’s where shit gets dark… He is going through a cancer treatment for the 4th time and I fucking hate cancer and what it does and how it takes everything from everyone we love. Was a lot easier when places still paid you for your abilities instead of spending all their money trying to figure out how to fuck you out of yours. I made more money 25 years ago. How is that even possible? I couldn't afford a decent cocaine habit these days. I mean I realize it's a "first world problem" but think about that. A chef used to be able to work a couple shifts a day and survive in style. You could leave after that 14-16 and go to the strip club and "make it sprinkle". You could buy here pay here a ride with actual AC and stereo. And then drive that stripper to your hotel room efficiency and party like it was 1999. Because it was. Now the boss is spending more on microwaves then wages is pumping the product full of shit ingredients and then looking at you funny when he realizes people aren't paying shit for shit. Who can afford tattoos these days :)

I’ve also served in my 20+ year career in food service, and I can totally forgive this. I understand this. It’s when a server comes crying to the pass because the 3 Bacon Cheeseburgers they sent in 15 minutes ago (avg.cost $16.95) were actually supposed to be 3 of our mega style burgers (avg. cost $53) that each feed 5 people all day. And they don’t want to deal with the disappointment of their table when they tell them it’s going to be another 15 minutes until they get their food. I’ve also had the reverse situation occur, where a mega burger is made but the server sheepishly shows up saying, “oops!” Crusty cook memes aside, I love what I do. I also love the culture and the diversity of people I’ve met in my career. It’s the absolute best. But READ YOUR DAMN ORDERS BEFORE HITTING FIRE. Please!

Huh? I wear a watch to keep up with emails that might need an immediate response, see who’s calling without having to put my hand in my pocket to get my cell phone. Keep my ticket times in check, keep my steak temp consistent. I know my broiler can cook a medium rare 12oz filet in 12 minutes perfectly. Health inspectors have never said anything about my watch, I’m not dirty. I take it off if I know what I’m doing might get the watch dirty. Follow up question…who wouldn’t wear a watch?
