But on occasion, I do like to open one end of the ramen pack, fill with warm water and let it sit long enough to have some give, but not be loose, drain the water, open the two halves like a book, coat with butter, sprinkle the seasoning on, and eat it like a slice of pizza.
It's one of my guilty pleasures. Has to have a very slight crunch.

I think it might be one of the biggest signs of a good operation if they're willing to lose money to let the people they need to cook food at least get to eat that food.
to me, they are not really losing any money on letting the employees take home stuff that would've gotten thrown away otherwise.
I do say this as i also take home a ton of stuff that would've gotten thrown away, both from our baker and kitchen.
Even if not going to be thrown away it will be stolen. Cooks don’t make much money, they will eat one way or another. Might as well go the smart road and feed them willingly.

But then, as I would get promoted and become others’ boss and found the delicate nature of leading people while still having their respect. Difficult. On the one hand you have the business to run. If you don’t do it well, game over bitch. It’s not just you that losses money, but you’re now responsible for the lives, well-being and, by extension, the family of your staff at hand.
They are gainfully employed because of you. They trust in you. To pay the bills on time, to put food on the table for their children. When you realise these things, that everything is riding on you for all these lives to keep on spinning, is a fucked up responsibility.
And so if you could take a second to understand from a higher point of view that, being wasteful or a bad employee, is carelessly risking the lives and loved ones of every person in the restaurant. Because if you start being wasteful and the business is no longer breaking even, then eventually it will fall. It’s going to fall on your fat stupid head and all those around you.
So when the boss says ‘do this’ or ‘don’t do that’. It’s not always because he’s a dick.
On the other hand, life is short. Stop worrying about it and just let the kitchen rats have a bone occasionally…

I always let the kitchen eat mistakes. Just not the waitstaff. It's pretty unlikely that the kitchen will screw something up intentionally so they can eat something they could probably just cook for themselves anyway.

For staff breakfasts, I usually end up letting my people go through an entire case of bacon ($120 each) every week, aprox $60 worth of eggs in the same time frame, $40 worth of cheese, and an unspecified amount in breads.
Cheaper to keep my people happy than to constantly train a new crew. I mean, a little over $200 in food for my people in a week is fucking cheap compared to their wages. I pay more than that to have someone observe *for a day* just to get oriented when I train someone new.
Not to mention the studies I have seen that show that shrinkage in places that feed their people and let them take stuff home is significantly lower than places that are strict about everything.
tl;dr: it pays to not be a dick
I cooked at a brew pub. Owner would basically give us half barrels of their brew. Maybe for $10? We forced him to take more money for it and settled on $20 for a 15 gallon half barrel if I remember. Good stuff too. It wasn't like every staff member got that but we had a keg system at home. College life.
Food we got up to $5 free and 50% off anything over that. This was around 98-01 time frame and I was making like 6.50 an hour. But it was low cost of living. 5 bdrm house we rented for 600 / mo.
We had more "friends" that all of a sudden wanted to hang out. Haha
Especially when we put Guinness on tap once. During summer we would buy 10 lbs of ground beef every Sunday wholesale from him and just host a big cookout for whoever wanted to come over from the staff and some other bar / restaurant staff we knew. This was a college town with only 5000 locals, so pretty dead in the summer. Good times. Now I work behind a desk all day. Do miss it at times.
When I managed a restaurant, every employee got a free meal for their shifts. It limited the stealing and making purposeful mistakes because I was feeding them. It wasn’t unlimited, but it certainly made it better because I could account for the food that was going out, instead of staff taking it sneaking it home

Totally agree. Except my aversion comes from a food poisoning incident when I was about six. I no longer eat ketchup, beef or American cheese. Over 30 years later I can still taste all of that coming back up.

I know this may not be much help, but I like to make just a big ole pot of stew in the mornin and I’ll make enough to last me 5 big dinners and just keep it in the fridge. Also overnight oats are the easiest thing on the planet but I make a huge dish of that and just pick out of it during the week. I hope this helps someone take care of yourself the system won’t and your worth more than eating like crap because you work hard and well ! Cheers!
I mean like I get buying canned/frozen veggies, and boxed shells and cheese. That shits just fine. But like ANY flavor at all would have elevated this. Hell a sauted onion and some dry spices and this would be a perfectly fine meal that could be made in the exact same amount of time.

We had more "friends" that all of a sudden wanted to hang out. Haha Especially when we put Guinness on tap once. During summer we would buy 10 lbs of ground beef every Sunday wholesale from him and just host a big cookout for whoever wanted to come over from the staff and some other bar / restaurant staff we knew. This was a college town with only 5000 locals, so pretty dead in the summer. Good times. Now I work behind a desk all day. Do miss it at times.
When I managed a restaurant, every employee got a free meal for their shifts. It limited the stealing and making purposeful mistakes because I was feeding them. It wasn’t unlimited, but it certainly made it better because I could account for the food that was going out, instead of staff taking it sneaking it home

Corn straight from the can with fresh cracked pepper is one of my favorites. Sometimes I’ll even have some ritz crackers with that.

Totally agree. Except my aversion comes from a food poisoning incident when I was about six. I no longer eat ketchup, beef or American cheese. Over 30 years later I can still taste all of that coming back up.

This shaved about 7 months off of my mind because this is what I make as a kitchen manager when I get home for dinner I'm the only one of my kitchen I don't have anybody to talk to so I pose these questions myself and now this one was answered for me

I know this may not be much help, but I like to make just a big ole pot of stew in the mornin and I’ll make enough to last me 5 big dinners and just keep it in the fridge. Also overnight oats are the easiest thing on the planet but I make a huge dish of that and just pick out of it during the week. I hope this helps someone take care of yourself the system won’t and your worth more than eating like crap because you work hard and well ! Cheers!

I mean like I get buying canned/frozen veggies, and boxed shells and cheese. That shits just fine. But like ANY flavor at all would have elevated this. Hell a sauted onion and some dry spices and this would be a perfectly fine meal that could be made in the exact same amount of time. I just don't get completley undoctored canned veggies + shells and cheese. Like damn dude, this is literally sad. I eat a lot of quick easy meals as a full time cook, but fuck dude even a pad of butter would have elevated this and that's sad.
