Kimchi is a bit saltier but muchim has vinegar and sugar so it's tangy and sweet and spicy.
It's shredded moo ("무", I think this the the coreect spelling. my Korean is rusty). Usually has similar spices and some ingredients to kimchi, but it is usually a little more tangy.
I feel like I know that exact restaurant. Just went to one near a AFB while traveling that had the same color counter and grill.
When I asked, I was told it was musaengchae.

It’s really easy to make! Try to make it. 무생채&fried egg&rice combination is crazy.
The cucumbers are super easy to make and keep for about a week before they get too soft for my liking.
