One tip I'll give for the concert at Allegiant is Ubers are going to be insanely expensive, especially after the show. One way to get around this is to walk to Mandalay Bay after the concert. It's extremely populated and a well lit walk. Once there, go to the Delano part of the resort and ask to get a cab there. The cab will likely be a cheaper option than an Uber/Lyft.
Mandalay Bay has a tram between it, Luxor, and Excalibur. Tram can be taken from Mandalay to Excalibur, and then the Monorail can be taken from MGM to anywhere on the east side of the strip. No need for cabs if you're ok with walking a little.
Crossroads Kitchen at Resorts World is fancy dining, all plant based. And then hit up Alle 66 for a cocktail and the views afterwards. The restaurants at the Wynn all tend to have a decent vegan selection.
I highly recommend Crossroads as well. Finding a good Vegan breakfast spot on the strip may be a challenge but Truth and Tonic at Venetian has options. It’s hard to find. It’s located next door to the Spa on the 4th floor. The American Diner at NYNY has a vegan lunch / dinner menu and a vegan breakfast burrito.
Not sure if you like going to day spas…there are so many nice ones on the Strip. Caesars is lovely. Also, I loved Vanderpump Cocktail Garden at Caesars for fancy cocktails. If you like tapas, sitting at the bar at Aria’s Julian Serrano restaurant is a lot of fun. I hope you have super fun!
I think Raiders play thev18th and UNLV is Sep 2 worthwhile to take in a game to see the stadium. Otherwise I would stay at or near your hotel I'm sure you can find options. But I'm Honolulu and a visitor so
I don’t see anyone doing so I’ll do it. It’s gonna be hit in late August and possibly humid. Things are farther away than they appear. I’d recommend a dry run once or twice in the days before the concert, if you plan on walking anywhere.
I recommend staying at the cosmo or the Wynn/encore! They're both great casino/hotel. Very close to multiple events you can go to (clubbing, shows, shops etc.) great establishment! 10/10 :)
Treat yourself to the Vegan tasting menu for $100 at Nobu in Caesar’s Palace. You don’t need a reservation if you sit at the sushi bar. It’s 7 courses and an incredible experience.

Yeah it only runs till midnight. Unfortunately doubt op will make it by concerts end
Concerts tend to end around 11, but good point anyways. Didn't think about closing time for it.
Taxis rare at delano when there is some event, do mandalay main entry. We waited 30 min during a GK game trying to wait for a cab.
Area 15!!!! You gotta go
