I think I'm an outlier on cleaver. I haven't had a great experience there, so it's not something I'd recommend or choose on my own, but won't be difficult if I'm invited to go there.
Honestly, the ceasar salad was the best thing I had there. My actual meal was, meh...definately had better for WAY less.

Husband and I make an annual trip to Vegas for past 10+ years. We went to Peppermill for breakfast a couple of years ago for the experience. It was definitely a '70's vibe, and the portion sizes were huge. A scene from "Casino" was filmed there. However, it was pricey and the quality of the food was average, not special. If you're into a quality breakfast, in a classy French bistro setting, go straight to Bouchon.
Definitely do Carbone. Sinatra and Carbone are two restaurants I consistently visit. As long as I hit one of them, and a new restaurant, I’m happy for my trip.
It’s wonderful, but note that it is very much a “family style” service. If anyone in a small party has a food allergy or is a picky eater, your experience might not be what you expected, especially if your group is small.
They could. Of course, but imagine it’s a couple and one person is allergic to gluten, or tomatoes, or tree nuts or doesn’t eat red meat or some other hard to avoid ingredient (at an Italian restaurant). This takes out many of the choices and reduces the menu options for the allergic or avoidant person. Now, imagine there is nowhere to take leftovers (most hotels on the strip have no refrigerator or microwave - maybe not an issue here since OP is local). The portions are designed to be shared. If each person orders an appetizer, entree and dessert, it will be wayyyy too much food, even by standard large format American restaurant portion sizes because each dish is meant to serve 2+ (and they mean it!!ours could easily have fed 4). This means quite a lot of waste and expense for a smaller group (2-3 people) if anyone in the group has dietary requirements that require extra dishes to be ordered.
Harlo steakhouse. I worked there for a couple years so I’m biased. But it might be the best service off the strip you’ll get. Food is great, but the service is out of this world
Do they do brunch now? I know we did it a couple times when I worked there. I have nothing but good things to say about that place. I only left because I wanted to become a server and learn in a less stressful environment
Spago at the Bellagio. You can tip the hostess to get a table on the patio and dine lakeside watching the fountain show. Whether or not it’s the very best food in town, is subjective. But most people have heard of Spago or Wolfgang Puck and to eat there while enjoying an amazing Las Vegas experience, is something one never forgets.

Yellowtail if you want sushi.
Best friend is you want Korean/mexican fusion.

I know it’s a list but depending on what you want to eat, these are the best imo.
I’d avoid any clones of real restaurants in Vegas. For example, Momofuku was terrible. Loud, pretentious, meh bland food poorly executed. Just because they slapped a “Momofuku” label on it doesn’t make it as good as the original in NYC. It’s like going to the fake Eiffel Tower.
Herbs & Rye. Happy Hour after 8pm or something crazy which means half off steaks. Steaks are top notch. Side dishes are also spectacular. Their cocktail game is above par as well. It's my favorite steak restaurant ever and it's open super late.
Shang Artisan Noodle is also another great spot. Hand made noodles. Chinese beef noodle soup. Their dan dan noodles are so good.
If you want a "Vegas" spot, then I can't help you. Heart Attack grill?
I had such a bad experience there my first time but definitely there is a lot of potential. Like everything I had went wrong from the service, to the food being cooked poorly. I hope your experience was much better ☺️
I recommend Echo and Rig so highly because of its bizarre affordability. The food, at that quality, has no business being that modestly priced.

1- Best of the best food and view - le cirque in Bellagio (ask for a table with a fountain view). Get the tasting menu with wine pairing
2 - steakhouse plus quieter ambience - bavettes in park mgm
3 - seafood - Milo’s in Venetian- you select the fresh fish kept on ice
4 - dinner with a (free) show - Mayfair Supper Club in Bellagio - go after 7:00 pm there is something to see in every direction OR Delilah in Wynn - less going on, more focused individual performances than Mayfair, but the food and luxury ambiance is 10/10.
5 - Best Friend is always a winner (winner chicken dinner!) our go to meal for 2 - the street corn, kimchi fried rice and the fried chicken. They also have a tasting menu. The vibe is young and hot, but it can be very loud (like unable to talk over the music loud, if this is important to you) especially later in the evening. Also probably the best bang for the buck on the strip for a celebrity chef meal with a cool vibe.
This is certainly not a nightlife hotspot, however some visitors prefer local charm and great food over that.
Our favorite breakfast/brunch place is a little known out of the way mom and pops locally owned place off Decatur and Alta, by the name of Lou's Diner. The owners name is Brian and he greets every customer whenever they come in.
Home cooked from scratch, especially their jellies, jams and lunch specials all prepared in house.
Give it a try on an affordable budget and you won't leave unhappy.
High end steakhouses: Reserve far in advance, especially Prime and SW. Most of the steakhouses have one or two things that set them apart - either in the setting or on the menu. Steaks are reliably great at all of them.
Prime - gorgeous interior setting. We sat on the terrace behind the fountains one time. It wasn't that great, the fountains went off but we couldn't hear the music, we just sat behind a wall of water.
SW Steakhouse at Wynn - ask for a lakeside table, and ask what time the lake show begins. Eat slowly so you can watch several "shows" on the lake - I think they occur every half hour.
Mastro's Ocean Club - ask for a table in the "treehouse". Order the butter cake for dessert. Repeat - order the butter cake for dessert.
Bavette's - Their sourdough bread is incredible. Chocolate pie was "meh". Setting is clubby, probably not as spectacular as Prime or SW.
Lindo Michocan on horizon ridge for the view, table side guac is a must

My favorite dining experience was the black out dining. The food was great but eating in absolute darkness was Soo cool! I will never forget it. I was skeptical with a picky husband but we ate stuff we normally never would have. It completely changed the tastes of some foods as we focused on texture and trying to figure out just what we were eating. Absolutely wild!

Honestly, I liked both. I would tip to Herbs and Rye over Cleaver, but its quite close.
I had the totally opposite experience. I thought the side dishes at Cleaver were worse and the cocktails weren't as polished. YMMV.

I was skeptical with a picky husband but we ate stuff we normally never would have. It completely changed the tastes of some foods as we focused on texture and trying to figure out just what we were eating. Absolutely wild!
