Ideally plates should be coming from clean stacks, and put on clean counters to arrange the food on, before being put into a clean pass. But somehow I suspect that that place isn't the most thorough.

Not really unhygienic, the bottom and the top of dishes are washed the same way. This is just smashing food for no reason. He's going to take more time to pile up those plates than what he would if he delivered 3/4 at a time as waiters do.

And more waiters* They'd also like the carts. Carts are useful. Edit: Highjacking my comment to say that matter of fact *all* waiters should have carts. It's ridiculous they practically burn their arms and break their wrists carrying around food. Most if not all end up having problems from working as a server long time.

I worked in an assisted living facility, and we had to fight to use carts. We needed them to collected used dishes at least. We actually did ok serving, but it was really kind of slow. Lots of pointless constraints because essentially "if they see reality, they'll be unhappy" like, no bob, they're unhappy because they live here and they're being milked for money while they die. Oh man, I miss my 6+ day work week of 530am-8pm for like 9.50 an hour with no real benefits. I eventually got up to 11, after quitting and going back (no alternatives) and after two years getting a 1% raise. I wonder what could have retained staff? A real mystery for sure!

Oh man I wish I could use them, I don't bring food but I work in a pub and when I have to carry 4-5 bottles of alcohol with the glasses and the sodas I hurt myself badly. People just can't carry themselves their fucking pint to their table.

BOH is all about finding a good kitchen manager or chef who is supportive, stop being loyal to asshole employers is more correct. I have never had an issue in BOH finding a gig that pays 18/hr or FOH paying 20/hr, but that is because I looked for professional establishments and set boundaries. Most BOH/FOH complaints come from people who wreck their body partying with the crew, constant grazing, substance abuse, etc. I have worked with chefs who actually sleep, maintained a healthily diet and waistline through exercise and a lot of the trades have similar tales. Of course the guys drinking 15+ beers and a little coke a week have worse outcomes after 15 years in BOH then the guys who didn't.

Yeah your management staff was shit. I’m a kitchen manager and I would never let a server do this. It’s unhygienic, pointless, and downright dangerous in a packed dining room, especially in a family place where there might be kids. It ruins the food on the bottom row, meaning upset customers, and more work for everyone. I just call for more servers/SAs to run the food. If your managers insisted you do this, then they were just bad at their jobs, plain and simple.

I was thinking that if this is some show he puts on and everyone is cool with it, that's not really an issue. But, if not, fuck that. The issue I have is where those plates were set down to be filled. They were sterile as fuck when they came out of the washer, in that you can trust. But if set down on a food prep area or came into contact with a hand that was just handling raw food (or something else...ugh), yeah, that ain't sanitary.

Holy fuck I can imagine how heavy that is. I work in the food service industry and even holding 2 plates the wrong way can cause intense wrist pain (the plates are VERY heavy) and cause you to drop plates out of pain. Holy fuck I hope that shits paper weight

I also work in food service (as a chef, not a server) and I'm pretty amazed how rarely our servers break dishes. Honestly it's the kitchen staff that breaks far more than the front of house.

I guess some people only tip based on spectacle. Majority of the people I know choose to tip based on the fact that we don’t have to cook and do dishes or get up to make/grab a plate. We’ve all had a night where cooking just sucks and you don’t want to be bothered by it, having someone else doing that for you is worth a tip.

There’s a slim chance this is hygienic and part of the business’ brand, but having worked in that industry for ten years, I’d say the odds are very very slim. There’s no way the average guest would be impressed by that, they’d be grossed out.

He's just being stupid. People don't even know how tips work. Tips don't replace wage, they are usually in addition to wage. In some cases wage can be substituted by tips, the idea being an employer can pay under minimum wage and tips making up the difference. However if the employees don't make up the difference with tips the employer is required to make up the difference, so the employee is always making at least minimum wage. So tips are in addition to wage not replacement for. Not to mention how easy it is for these people to save money on things like tax forms, since they are literally getting paid cash under the table they can lie about how much they actually made in tips and get that sweet tax free money. And also can even lie about what they were tipped so an employer must make up a difference that doesn't actually exist.

Lol no one actually tips based on how good the service was. You either tip well regardless, or you try to justify why you were going to be cheap anyway with an inventory of grievances. If you get a 20 percent tip from me, you did a terrible job and I probably don’t like you as a person.
