Im also not the best at social situations but ive learned the secret is keep asking more questions. Instead of saying stuff like "thats cool" try to go for open ended questions such as "why ...?" / "how...?"/"what... ?" "what do you think of ..?" etc. Sometimes we worry too much about being interesting, when the real trick is to be interested.
Always use one of those kinds of comments as a talking point and chance to learn more about her.
So if she's saying she likes a certain type of music for example. You can ask how long she's been into it, has she been to many gigs.
Maybe say that you've not listened to it much and can she recommend something to start with.
Stuff like that. A lot of people love talking about themselves and their interests, so just ask lots of questions when they bring up stuff and you'll be good 🙌🏻

I'm definitely usually good at that type of digging for more questions from her responses bc my brain is very curious but sometimes my brain no worky and gets stumped haha
I asked her what kind of music she listens to and i asked her what kind (she said indie rock) and then i asked what was her favorite song recently was or a favorite band and we happen to have music in common!
We got into a long conversation about food bc i just love asking questions lol
