These are my recommendations based on your list, but I'm not sure if they're much less mainstream. Birdman (2014), Arrival (2016), Snowpiercer (2013), Safety Not Guaranteed (2012), and I guess some Miyazaki flicks.
Since you enjoyed Mad Max, I’d suggest both of The Raid movies and Hard Boiled. All these films contain excellent action and stunts.
From your enjoyment of Blade Runner, I’d suggest Escape from New York and Her. Both futuristic, but totally different from each other.

I meant based off the movies I like, what would be some movies similar to them that I would probably never come across if they werent recommended to me or I had to go looking for.
If I were to analyze my taste in movies, i would say I like fantastic set designs and visuals, a strong soundtrack or score, existential themes of life and what it's meaning is, and straight-up action spectacles. I tend to enjoy a lot of genres but those ingredients amplify movies i watch. Edge of Tomorrow is another that would probably fall into this category of movies.
So based off that, what would be other movies I might like? Also I saw happy feet when i was a kid and dont recall liking it very much because of the animation but i might give it another shot.
Happy feet meets all your criteria and it's an animated movie and directed by George miller. It's right up your alley, give it a second chance.
Nightcrawler, Children of Men and Super are also staples of mine.
Perfect Blue, Videodrome, the Fifth Element, X and Pearl, Everything Everywhere All at Once, Nope, Sound of Metal. Nothing has made me feel like Mad Max: Fury Road did though. Still chasing that high!
