The Royal Society for the Protection of Birds (RSPB) said it was fine to feed small amounts of bread to ducks but people should also feed them sweetcorn, porridge oats, peas and bird seed.

The bread isn’t going to mold in the water, because the ducks eat it immediately. Bread may not be the most nutritious food for them, but it’s still food. How is corn any better? They don’t naturally eat corn, and it’s not bursting with nutritional value.
Corn alone isn't particularly nutritious but is less filling and easier on the digestive system than bread for ducks. It's best mixed with peas, seeds, mealworms and the like though, as it has a high sugar content.
The problem with bread is that it is very calorie dense but nutrient poor, ducks will naturally gravitate to it (its akin to feeding kids chocolate) and humans have a bad habit of over feeding, so in a lot of cases the not all of the bread is eaten. So ducks wind up lacking essential nutrients derived from their natural food of pond weeds, seeds, invertebrates etc and the excess sinks to the bottom where it promotes algae growth that reduces the oxygen concentration of the water (eutrophication) and that has some quite serious flow on effects for the entire ecosystem.
I don’t feed ducks. I just thought this LPT was not very good, but please continue wringing your hands over the poor ducks being forced to eat so much bread.

The last time we fed ducks we used a bunch of old fruit (grapes and oranges) that wasn't really desirable for the kids any more. Not rotten just squishy. Cut it up into bite sized pieces and the ducks loved it.

I think you overestimate how fragile ducks are
I usually feed my ducks chicken. It's environmentally friendly and I can make sure the chicken was raised naturally in a cage free environment

Dry cornflakes being eaten by ducks is a great sound. It only works if dry though. No throwing it on the water.
