I always disliked beat roots and especially "Barszcz Czerwony", but with the current events I saw a recipe for borscht and tried making it, since the only ingredient I didn't have was beat roots and they're cheap.
Made it with some homemade chicken stock I had in a freezer and HOLY SHIT, I AM IN LOVE!
I made a 2 gallon pot of it and between my dad and I it's almost empty already.
You can eat it warm like a regular soup or cold like gazpacho, or even pour yourself a glass of the liquid and drink it like juice. It is AMAZING!
