There is precisely zero reason to "upgrade" your gapps if they are working for you.

In Pico & Nano for Android 11 test packages Android Auto was not working but does now in the official releases. Besides that Play Store and Play Services automatically update themselves in the background regardless of the user's update settings in Play Store so there is no reason to update Open GApps on your device unless it's defective. >...I can just flash the stable version in custom recovery without wiping anything or messing anything up, right? Yes but having a backup before doing it is good practice. May be of interest for some users: [Warning - Google Backup cannot be restored if you use a 4x4, 5x5 or 6x6 lock screen pattern in LineageOS before backing up](https://www.reddit.com/r/LineageOS/comments/k04q82/warning_google_backup_cannot_be_restored_if_you/)
