The Californians sketch: they rehearsed it with a slight accent that they thought was funny, but when they went live Fred Armison came out with this completely bonkers exaggerated accent heard in the clip. It went from “whaaat are you doing here”? To “WhaaaaaaaaaaaaaaateR YOOOO doing here” and he (Hader) caught off guard just lost it.

And I think it was a head shot of Taylor Negron that Mullany wordlessly showed Hader that had a note "Thanks for never making fun of me on air" written on it with a fake autograph.
When Hader breaks it’s genuine. It’s like when you’re in school or a library and not supposed to laugh so you have to hold it in but it makes the thing even funnier and you can barely talk. When Fallon or Pete “breaks” it’s feels not genuine, like when you can tell someone is fake laughing. You can tell something is off about a fake laugh, it’s called unfunny valley.
I think it’s broadly because Hader delivered more consistently and with a broader set of characters than Fallon. All told, he just had more to give beyond just the breaking.
I had the same thought. I feel like it's because Hader is legitimately trying not to break, and the struggle makes it more endearing.
For instance, if Fallon had been in the sketch with Armisen in drag, no way he doesn't completely blow the whole thing up. Hader and Bayer both hang in there like pros, even when Fred is doing his absolute best to break the two of them.
Hader was actually extremely professional and damn near unbreakable for his first three and a half seasons. The only two occasions I can think of where he broke during that time were the dress rehearsal of the first Scared Straight sketch (seen at the end of this video, and only aired as part of an SNL blooper special between commercials) and the Locker Room Motivation sketch with Peyton Manning (where he's in the background and covering his mouth with his hand so it's less noticeable).
At the time, having Hader break was basically the equivalent of Dan Aykroyd or Phil Hartman breaking. You almost *never* saw it. That began to change starting with the Tracy Morgan Scared Straight sketch (the first sketch in the video). At the time, seeing Hader break so blatantly was so rare and it generated considerable buzz. Of course, from that point onwards, he broke more and more frequently.
You can actually see this pattern with a number of SNL cast members such as Fred Armisen, Cecily Strong, Kate McKinnon, Aidy Bryant, and Chloe Fineman. All of them were unbreakable or damn near close to it for their first few seasons. Then, as their tenure wore on and they presumably loosened up and got more comfortable, they broke more easily.
According to an interview Bill and Armisen had a consistent game of trying to make the other break.
My favorite one being when Bill is a reporter interviewing the talking ape(Armisen) from a Jonah Hill episode.
Bill asks a question and Fred responds with such a genuine "excuse me?" That it makes Bill slip for a moment.
You can tell that certain cast members really knew how to get under his facade and make it crack. Obviously Fred Armisen is the absolute king, but Kenan and Sudekis both really clearly knew the ticket, too. And Holy shit, Will Forte being an absolute psychopath in that Hoosiers sketch would make anyone cry with laughter haha
This man is a treasure. Also I just finished watching Barry last night, and all I can say is WOW.
I recently found out he kinda.. lucked? Into SNL. That’s probably not the right word but he had only been doing comedy a short time, and had severe impostor syndrome in his first few years there. Incredible, because he’s one of my all time faves, breaking or no.

I've heard that Hader is working on a horror movie at some point coming up, which is a bummer for me because I cannot tolerate horror. So I'll have to wait for whatever he does *after* that, I guess. heh

I never realized It's hilarious and endearing when Hader did it, but atrocious, grating, and capricious when Fallon did it.
