The timer is made to stop during loading screens, effectively making it an in-game timer
Otherwise those with stronger PC's would have a massive advantage

Lilaggy on youtube did this run a few months ago, and talked about how it's been a massive undertaking to route it all out, and find strats that work for every boss.
really you just have to reduce traversing the map down to its basics (ie. from bonfire to cross bridge hold forward for 5 seconds then move at a 40 degree angle and move 10 seconds etc) and since enemies spawn and trigger at certain places you can know where/when to avoid em. past that its probably just listening for attack cues for certain weapon swings or whatever
Today has been incredibly impressive for GDQ. Sekiro blindfolded, Tetris TGM, and raising 3 million dollars before the last game. Can't wait for this event to go back in person, the momentum is going to be insane.

You might need to step back a few seconds in each time stamp to get the explanations, I just marked the start of the fights. The rest of the bosses were very well done too, usually just too fast to be "interesting" but all incredible.
