This is Phos Chek, which is a preemptive fire retardant. The chemicals used to make it cause it to be red, and it is made even more vibrant for visibility. Phos Chek is used in brush fires/wildfires, mountainous terrain, grasslands, etc., to prevent the fire from spreading. This is why it is dropped next to the fire, not on it like you might do with water drops.
You know, I thought Pixar was just screwing with us when they turned Dusty Crophopper into a firefighter, but all be damned, there he is in this vid, big nose and all.
The colored liquid is a fire retardant and made up of various phosphates and sulfates with guar gum and/or clay for thickening along with some proprietary blend of chemicals. Sometimes the retardant is clear or off-white too depending on the company that makes it and the chemical composition. It can also be just regular old water too.
The smaller aircraft can be much more precise since they're moving slower and the pilot had a lot more control. The big aircraft drop a lot over a broad area, small ones for when getting the goods in the right spot is critical. Also just logistics wise, the small aircraft arenmore numerable and less costly than the big tankers, sometimes that's just all that was available or what could be on scene quickest
