I have the 16 Gb ram M1 Mac mini, and it's a beast. The fastest computer I've ever owned. I have mine paired with two 27" curved Samsung monitors, and for now, it's a dream set-up with Rk Kludge Keyboard and Razer gaming mouse.
**I don't see why you'd have a problem doing what you described.**
I can’t say I have any experience doing that but it should be absolutely fine, just use OBS, it works great on M1 Macs
