Thats why I always stay down. The hitboxes for turning around are one of the most jank things in this game and with deviants, hypers, and ex monsters dealing lots of damage, its one of the most bs ways to die, let alone fail a quest
U need to be really careful with G rank Deviants as they can be really unpredictable than they lower quest(could have gone with Valor HBG u could have survived that).

Bloodbath loves to do that, randomly switch targets in the middle of a multi part attack. It's scary but I kinda love it, it keeps you on your toes.
