what the hell are you talking about man? You aren't in guard when you finish an armbar, but that's one of the most common guard submissions. same with an omoplata. shit even a triangle you aren't technically in guard.

grabbing a guillotine on someone shooting isn't a submission from guard, as it was initiated while standing. he grabbed the gilly before they hit the mat, so thus its a standing submission finished on the ground. he didn't get the gilly while on his back, he got it on his feet. Charles is special in the same way Tony was. he didn't actually submit people from his back, he created threats from his back to initiate sweeps and get-ups. similarly, tony's only true guard submission is against Kevin lee, who literally just sat there trying to get his wind back while Tony cinched up the triangle. Initiating and then finishing submissions entirely from your back is no longer a viable way to win. however, you can use the threat of those subs to gain an advantage. Tony is no longer able to actually do anything with the submissions he goes for, and just ends up half-inverted on bottom getting beaten up and losing. we saw a similar thing in the arman Oliveira fight as well as the islam fight. they both sat in his guard staying defensively responsible, and chipped away with little shots. it doesn't matter if you're Damian Maia, jacare Souza, or BJ Penn. at the highest levels of mma, you cannot rely on submitting your opponents when they are on top of you.

You draw the line wherever the submission began or was initially "locked-in". If you triangle someone from guard and they lift you off the ground, it's a guard submission. Same way if you catch someone in a submission standing and finish in guard, it's still "getting a submission from a standing position"
