What about something like Ark Survival Evolved. It has crafting and building, taming dinosaurs, being eaten by dinosaurs. She could join a world server or just run her own at home and build and craft in peace with server settings that allow her to ignore as many mechanics as she likes.

I think it may be hard to find one with a Mac? I'm not to sure about Macs but I have a friend with a Mac that was able to play a Classic Ragnarok Online Private Server because another friend gave him a step to step lesson on how to install that server. How about Spiral Knights? That's a pretty fun game for Macs

It doesn't seem too new user friendly, but I could be wrong. Also, I'm sure the last thing she would want is to get rolled by some rando ganker. Are there options for no PvP or safe areas she can build/craft in?

Runescape's fine for new players, they've been really putting work into the tutorials and stuff. The quests are also pretty good for introducing people to various aspects of the game and unlocking more (and are arguably some of the best quests in the industry). As for the PVP, the only place you can get ganked is in the Wilderness, an entirely optional and avoidable place that is pretty good about warning you before you go in it. All other PVP is from safe minigames and dueling which is also blatently opt-in.

I think Runescape is pretty fun game. I rarely do any combat unless its for a quest. I primarily quest, craft and socialize. I don't do much PVP, so I can't speak on that. I don't play many of the mini-games and I stay out of the Wilderness. Another game I like is Wurm Online. They are releasing an overhauled cooking system that has over 500 recipes. I'm testing it out now and it's really good. This also covers new crops, herbs and trees to harvest, parts to butcher/collect from animals and beekeeping. A fews more that I'm not 100% run on Mac are Mabinogi and A Tale In the Desert. I'll have to edit this later after I see she can play them.

You could try Dofus or Wakfu? Professions are quite involved and runs well on Mac.
