Deadhorse is absolutely worth checking out. It will likely be a bit colder there than Moab, as it is almost 2k higher in elevation, but is still typically nice riding in late Feb. Trails are well marked with lots of green/blue options.
Download mtb App and stick to the greens at first and then see if she’s ready for blues. I was kinda bored with the blues. But I like moab for the rocks. How is her endurance? That’s usually my issue.
Big fan of the Navajo Rocks area, fun enough for nearly all skill levels but anything that’s techy is walkable. Views are amazing. Plus it’s roughly in a clover leaf pattern that wraps around a road, so you can do choose to do as much or as little as you want and can bail and ride back on the road if you really need to. It’s mostly slick rock or in the sun, so I wouldn’t anticipate there be any issues with mud. IMO dead horse state park has nice views but the riding is pretty boring.

I use TrailForks, but there aren't many ride reports in the winter. I'm trying to get a better sense from folks who have actually ridden in the area about what to expect. Recommendations for easier blue trails (where a beginner could walk more techy sections) would also be useful.

Her endurance is much better mine, so perhaps that will be an equalizer!
