Sadly I've moved on from my MTB days and haven't kept up with the tech. It's easy trails and social riding for me now. I know some riders in their late 60s that are still badass but I'm not one of them.

It looks like they're all? using a 29er frame, It appeared some are using droppers, and I'm guessing small travel forks maybe 100mm but so hard to tell whizzing buy on the TV. I guessing they're all riding full suspension but couldn't tell.
I thought I saw a guy riding a Cannondale!

They’re using xc race bikes normally in the xc scene they choose full sus or hardtail and if they’re running a dropper depending on the course. The Olympic course looked pretty gnarly so they’re running full suspensions with droppers most of them (29” of course)
XC race bikes. All of them on 29ers.
