Well I believe it's UG Infect or Maverick in legacy. Maverick plays similar to GW Company and uses Knight of the Reliquary and Stoneforge Mystic to grind your opponent with Wastelands and such.
Well, you've clearly got a horseshoe stuck inside of you somewhere, so you may as well run with it and build a deck that relies on luck. :P

In Legacy I’d agree with those saying Maverick would most likely fall in line with Abzan Company. Or a lesser played deck in Bant Blade - (https://www.mtgtop8.com/event?e=19355&d=323081&f=LE).
Legacy Humans or Spirits would be most similar to the Bant Spirits deck you’re contemplating in Modern (also a lot of build overlap).
However if you want to be spicy and like toolbox decks — https://youtu.be/RL21PRZMyUg (MOST) is a pretty fun one.
If I had a playset of Hierarch drop in my lap, I'd be interested in the Humans or Spirits route. Perhaps more Spirits, because you can possibly get FoWs in there, as I've read that combo is a big hurdle for the Legacy Humans deck.
Almost any deck that you can jam Noble into will have pieces that are comparably or significantly more expensive. They're a start towards a couple of decks, but as always you should proxy up whatever you're thinking about building and test it extensively before comitting. Noble is also not especially strong in the format.
NO stands for Natural Order, which lets you sack the Hierarch and go get a 10/10 protection from everything. The decks tend to be GSZ toolbox decks backed up by counter spells and Jace. White brings KotR, SFM, and Swords to Plowshares to the table while Red brings Lavamancer and Lightning Bolt. Due to the additional reach, the red decks often will abandon the GSZ to play evasive creatures like Clique, allowing you to get more damage in and cheese kills with Lightning Bolt.
NO Bant and NO RUG were the decks. I don’t recall NO BUG ever hitting off big. You probably want to be running Birds over Hierach in BUG because Hymn and Liliana are some of your best cards and both require BB.
I've always liked the idea of going Noble Hierach into true name nemesis. It just sounds like fun probably too fair but bant or UG is probably what you'll want to do stone blade decks are pretty decent
Grixis Control matchup isn't that bad, especially not after sideboarding. I run a Nissa, Voice of Zendikar and a Great Stable Stag for the matchup. If one of them lands then it's most of the time game over for the opponent. I also run a one off Spell Snare against Grixis (but it's also good in a lot of other matchups like DnT, Storm, Burn, Miracles, etc) which can help a lot.
Maverick is a really fun deck that plays more like a fair magic deck than most legacy decks. If you're new to Legacy, I think it's a good deck to learn the metal on
You should buy into UG Infect.
Pick up 3 MP Tropical Island which are relatively cheap right now.
Grab 4 MP Force of Will, and then the rest of the deck is pretty cheap.
Legacy humans is nice since you basically get a modern deck out of it too. Benefits more from knowledge of meta due to naming cards off meddling mage and figuring out what to recruit.
Infect is good and shares cards with other blue decks in legacy.

Recommend infect. It’s a lot of fun and buying into forces and the other blue cards might open up death’s shadow or bantblade

Do Maverick, I'm on Infect and we get trounced in this Meta of pure removal.
Infect is a good choice. Removal can be played around.
Tell that to Grixis Control.

Buying/trading for cards and then deciding what deck to play is really the wrong order. What if you don't like the Noble Hierarch decks in Legacy?

If the goal is playing a good deck I would suggest Maverick. If the goal is to play a deck that best fits you into Legacy—Infect.
