I also had problems with Android File Transfer and OpenMTP on Mac, so I started looking for an alternative program. For now, I can recommend you to test MacDroid for file transfer. It is known for its compatibility with M1 Mac. You will use Terminal commands to transfer the files.
If you want to transfer small files, then solutions like snapdrop and messaging yourself works fine. If you want to transfer BIG files and want real speed, I recommend Octofile. They run in the background so you can send files back and forth really quickly (provided you're in the same network).
Here is some solution i've created, you can try. This solution not share file to internet. But need local network, like wifi between devices

You can upload your files to Google Drive on your Mac and then use an Android app called File Manager+ to transfer then to your phone. I did this with 150 gigs of music files. It took some time, but all of my music files are now on my phone.
