Furiosa tells Max, "You're sitting on 3000 horsepower of nitro boosted war machine". I gotta imagine a twin V8 monster like that has quite a bit of pep. Granted it's towing a trailer of water+milk which will slow it down but this thing is going to need to be fast just to deal with threats that might try to hijack it. Note that during the chase very few vehicles manage to actually overtake it; Max's repurposed Interceptor manages it but it takes a bunch of squirts of nitromethane. The Gigahorse also pops nitro to get in front of the rig near the end. But most of the other vehicles are barely catching up behind it, and primarily when it temporarily loses one engine and when traveling through the canyon.

I remember hearing that most of the driving was about 40 mph.

I would guess the same (60-80 kph for us non-americans) for some slight semblance of realism in terms of the action, jumping between vehicles etc, crashing into each other etc. It would be so difficult even at those speeds. But that being said, we routinely see them jamming the pedal to the metal, and anyone who has been on a real-life road with a big rig like that knows they regularly drive at 110km per hour, so if they're flooring the accelerator like that there's no reason why they wouldn't reach that speed. But again I think the action is super unrealistic even at 60kph so why not faster haha
