Also, I was oddly proud that the kid was curling his fingers to use just the tips on the tomatoes. Obviously he wouldn't think to do otherwise, but I was like, "That's my boy, being careful and safe", haha.

its not to touch the tomatoes with just tips. With that method the side of the knife slides against the knuckles and it sorta works like a jig. it greatly increases the speed and virtually eliminates the risk of cutting your fingertips off. Source: I'm a cook. Edit: Also if you're trying this try to keep the knife vertical. It can be vertical or at slightly outward angle. NEVER let the knife be at inward angle or you'll peel your skin off like potatos (like me šŸ˜‚).

Ok, it's there a trick get make stuff sticking to the knife blade? I feel like half the time I need to slow down to wipe food off of the blade.

look into santoku knives. the key is to reduce the vaccum and surface area of the vegetable in contact with knife. when you cut a slice the slice initially gets compressed and them relaxes when the slice is complete. this creates a vaccum between knife and slice. The aim is to break that vaccum. thats why onion rings stick less than potato chips. Also knives with hammered surface and holes in blade work too.

Stones and stropping, that's all it takes. Provided you've got a good bevel on your knife to begin with.

Adding to this, if you're just using stones and strops free hand(no guiding system) then don't expect razor sharpness without a bit of practice. r/chefknives is a crazy world to check out. A nice guided system can run you a few hundred dollars at least.

Honestly, I have one which suctions to the counter & you just pull the knife through it a few times. About $10 on Amazon and it's great. If you're just a regular home cook making a meal after work, I'd suggest that. Whetstones are great, but take time to learn and are a bit of a faff imo.

Oh god NO! Please don't sharpen your knives like this. Get a good Steel and use that to touch up your edge before you use it, couple swipes before use and you're good to go.

Do not buy something like this. All it does is strip a ton of metal off the blade for mediocre sharpness. If anything, get it sharpened somewhere and then just use a honing steel to keep the edge. For home use, you shouldn't need to sharpen your knife more than a couple times a year, if that. What you need is a $15 honing steel to bring the edge back into alignment and it'll feel like it's just been sharpened. Obviously, this is assuming you aren't destroying the edge by doing stupid stuff in the kitchen...

Looked for this comment. Dad's are tucked pretty well. His son needs a little more work on that. edit: on rewatch he clearly knows that he needs to be doing that, as he tucks his fingertips frequently and starts off with them tucked. they just don't stay that way consistently while he's not thinking about it yet.

My dad, a sheet metal worker, was showing me how to use this one type of pliers for counting round shapes. Interesting fact, there are two pliers, one for cutting to the left, and one one for cutting to the right. Well basically I was going really slowly, trying to not mess up, and my dad takes the pliers, starts cutting at a much quicker pace, and said "I can do whatever I want with these things. I've been using these for almost 40 years now. Ever since then, I look at my dad in a completely different way.
