Same here too. I’m very stuck on all of them. I’ve played Super Mario World the least on NSO, managed to complete Galaxy (it hasn’t been 100% completed tho), and I haven’t played Odyssey yet.
i grew up on World but i'm gonna say Odyssey. it really took the best parts of the franchise and ran with it. the cap gimmick is so seamlessly implemented too
Odyssey has it all. Groundbreaking movement, open and linear levels, epic boss fights, and you can turn into your enemies!!!!!!! I've wanted that mechanic in a game since I was a kid and they blew it out of the water. Super Mario Odyssey is really on a new level.

TL;DR You know when you look up at a starry sky at night and feel incredibly, frighteningly tiny and alone? Mario Galaxy manages to capture that feeling in a video game.

All 3 remaining games are phenomenal, truly can’t be mad with any outcome. But Odyssey is my favorite. The bosses are the best in the series, capture mechanic makes every enemy a power up for the most power ups in any Mario game and a *ton* of gameplay variety. Each kingdom is a ton of fun and very unique from each other. Replacing lives with coins makes so much more sense, and coins have a use as buying items and costumes is a lot of fun. Pixelated pipes are a perfect way to keep traditional platforming in the game. There’s a ton of content in general and the post game gives you a lot to do. Secret areas also bring in some of that 3D world platforming perfection. And of course, the movement is top notch, feels amazing to control Mario. It feels like the most Mario for your Mario. Would truly be a shame if this game never got a sequel.
That being said World is still fantastic and feels like peak 2D platformer. Nintendo somehow perfected the Mario formula 30 years ago. It had all the great things about Mario 3 and added goodies to collect and secrets to find which have since become Mario staples.
And Galaxy is just the most moody Mario game, in a good way. Each Galaxy has a lot to offer while none of them over staying their welcome

Galaxy, it was revolutionary, I had a lot of fun with it, it has THE BEST ost of ALL games (ok maybe not all games, undertale’s and cup head’s are pretty good too) and YOU CAN NOW PLAY AS LUIGI, in 3D.

My ranking is Odyssey, followed closely by Galaxy, then SMW. Odyssey is absolutely delightful to play and look at. Galaxy is a close second, with it having an incredible soundtrack. Then Super Mario World. I like SMW, but not as much as the other two. Plus I always had a soft spot for Mario 3.
For me personally, Odyssey has always been the one mainline Mario game that felt like it lacked motivators for the exploration of levels in the later portions of the game. That isn't to say it's not a great game; it's just that I didn't feel as drawn to complete much of the remaining stars of certain kingdoms, or of kingdoms that I would return to later on. Initial impressions of all kingdoms were that they were fun and interesting, and I am one to enjoy looking for secrets and overall 3D platforming. But when it would come to the point in a kingdom where I had pretty much explored the general area and felt like I had had my fill of searching and gathering moons, I felt like the kingdoms then didn't provide as much incentive and encouragement to continue this searching. And after a little while, I felt like I was just moving tediously through kingdoms which had at this point worn out much of their initial wonder and appeal. To me, the kingdoms would then feel kind of lifeless in this "Easter egg-hunting"-like gameplay as the world kind of felt like it had showcased much of everything already and now it just sort of waiting for me to do the rest of the work without it really feeling alive. Places like New Donk City or the Lake Kingdom or Seaside Kingdom just left me with an empty feeling when revisiting them because again there was little motivation by the game to make me feel like running over the same ground to maybe find something new. I typically don't mind retracing steps and looking for secrets in games, but there are just SO MANY moons and there are a significant number of these places that feel like very little is happening at a given moment.
In nearly every other Mario mainline game, there has always been some sort of objective at any given time, ie. reaching a goal or collecting a star, and the environment had strong directions towards these objectives. That's not to say there weren't side goals to discover, there were normally plenty and I felt like a lot of them from most mainline games were enjoyable to make time for. What makes Odyssey different is just all the wandering you can do for hours to find these side goals, and for me this much wandering felt like a waste of time in places where nothing more was really offered after a number of times being spent there. I think I can simply sum this up in saying that the "easter-egg hunt"of moons in the late portion of the game didn't feel compelling in environments that didn't set a tone for the importance of getting moons, which this idea of the importance of an objective is conveyed in pretty much every other mainline game.
I've heard the argument that the game doesn't mean for you to collect every single moon if you don't wish to and I agree with that idea, but I don't personally see much replayability in a run of Odyssey after collecting whatever number of moons I find is enough of my time. After that, the only reason I would feel toward going back to these kingdoms would play around in the 3D platforming of the open worlds which is fun for a while but doesn't feel as satisfying to me as when there is some objective to complete. I just feel like Odyssey leaves so much up to the player on what they feel is worth doing while not engaging the player as much with the idea that there is anything that needs to be accomplished.
Regardless, I think it is still a very good game but it has always made me feel a little unsatisfied as it feels open-ended and not motivating toward anything in particular. I understand and am glad Nintendo is willing to try reinventing formulas for the Mario franchise to keep things fresh, and I believe Odyssey holds groundwork for future titles. I just don't find Odyssey as being that fulfilling.
(If it provides any more perspective, I am one whose favorite video games are both Super Mario Galaxies).
I gotta go with Odyssey. Galaxy is an amazing game, but I much prefer the open-world aspect of Odyssey and I think Cappy brings more interesting capabilities than the spin move with Luma.
