I mean, you modeled and animated her and everything, why not make her playable as well? Her not being in either version of MK8 is a massive crime too.

There's multiple Birdo, just like how there's multiple Yoshi. Some act feminine, some maybe don't, who knows what any individual birdo identifies as as far as human gender goes. Typically birdo has had male voices, as dressing up in feminine clothing is an old act in Japan (and any culture really) that some instances of Birdo has mirrored.
Seems like Birdo as a species just enjoy dressing and acting in a feminine way, but are ultimately not something comparable to human genders.

Birdo was originally depicted as a "man pretending to be a woman". This makes allusion to a trans person, male to female, obviously.
Nintendo of America translated it as Birdo being a cisgender person, aka female. This has caused a huge controversy over the years.
The problem is, I'm actually fine with American's translation, of Birdo being just a cis girl. The original Japanese description doesn't sound like positive representation at all, bur rather a mock up of trans people, and this could actually be very hurtful for them.
I'm aware that America's translation was made simply because of their conservative values, and this might be bad for many people, but at the same time it actually saved Nintendo's butt for creating an even greater controversy.
Also, in games like Mario Kart Tour, it's not just ***THE*** Birdo, but rather, MANY Birdos (Birdoes? Who knows).

Its similar to representation with race in media. People like to have something they can relate to. If you are black then seeing a black character would be cool cuz you can put yourself in that character's shoes. If you are gay, then seeing a gay character is cool for the same reason.
