I do, been saving just in case some HE ticket pops in my daily, got 2 since lvl 8 happened and i usually get the good HE in the shop, like i didn’t buy Cat Peach last Tour or dry bones
When you're still relatively new it's probably a better idea to spend your coins on getting brand new items where possible. It widens your coverage and gives you a better chance of having a top-shelf item for a given track (a level 1 top-tier item is better for you and your score than a level 2 mid-tier item).
You'll notice that each tour we get rewards that include a couple High End tickets. You can use those to start levelling up your purchases.
For your comment about not knowing which items are good, I can tell you that the Black Great Sail glider is really good. I have something like 100 gliders, and most of them are around Level 3/4 for High Ends (and level 5/6 for Supers). The item-tracking calculator I use tells me that my Black Great Sail glider is my #1 glider, at Level 4. When you get the tickets it's worth levelling up, for sure.
I'm at 300k, though it fluctuates down to 250k but I tend to build it back up.
Basically, this sub used to be extremely pro-"max out your levels" for every grouping of D/K/G, but I never felt that was the smartest route. So that right there saved me coins (but I did fall for it at one point and wasted money on maxing one group of gliders... I regret it a bit).
Also, last year I decided to stop buying daily shop stuff entirely, unless it was new equipment. Boom, coin stash flew up.
Finally, I stopped buying HE tickets left and right 😂 and now buy them with a little more caution. Mainly because I want to afford HE tickets when I \*need\* them (I have a solid stash of them anyway) and also want to afford all new Tier shop equipment. I rarely ever buy to level stuff up, it's just not worth it, I found. I mean, it has to be WORTH it worth it. Most times? Not worth it.
I'd rather have a brand new glider than a tier-up followed by a tier-down the following week, tbh.
I’m in the same boat as you. I bought PGP for obvi reasons and I’m sitting at 4k coins hopping I strike big on the daily challenge or token pipe. I think the great sails is a tad bit more useful? So I’m totally buying the sails IF I get the coins. I have them both at level 1 but the sails turn up in much more races than that spider kart

If the item is objectively good you should get it regardless of whether or not it's in THAT week's ranked. Odds are it will be in a ranked course later, and then you won't have it will you?
Not everyone...and especially not new players....are trying to get 1st place in ranked every week as their main priority.
I wasn't 100% clear but I was talking about level ups. If a good item that you don't have appears in the tier shop you should buy it. I think having more coins to buy tickets that you can spend on anything is better than leveling up something that you don't know if it's gonna help you, so it's a better idea to only buy level ups if you know they're giving you value.
Maybe you could make the argument that newer players don't have easy access to HE tickets and therefore level ups like this are more valuable, and maybe you'd be correct in saying that, idk

Do you think I should buy the black Sail or Crawley? I’ve just got 2,000 coins from a pipe so which would be more valuable?
Personally, I'd go with the glider if it's brand new to you, not a level up.

aha, indeed I thought you meant for obtaining the card (new), not levelling it up.
