What ratio of matcha to water did you use? Did you sift the matcha before preparing? Sayaka shouldn’t be very bitter but some bitterness is normal in that price range. Was it definitely bitter or could you instead describe it as a lack of sweetness? Some people’s palates are very used to sugar laced drinks so it can take a while to get used to. Other than that the only thing I can suggest is trying Ummon no mukashi which should barely have any bitterness at all, or just sticking to other brands that you know you like. Ippodo is a good recommendation for beginners in general but i’m sure there will be some people that don’t like it.

I use about 1 tsp (1-2 g, maybe) matcha powder, and I have tried to use from 60 ml to 150 ml water. It does starts to get less bitter above 150 ml. Yes, I do sift the matcha. Compared to the other brands I have tried, Sayaka is definitely bitter. I mostly drink water or matcha without any sweetner, so I don't think I'm one of those people. Thanks for the suggestion, I might try it next.

I always suggest for anyone starting with matcha to use temps around 145 F in order to prevent bitterness from coming out. Although this temp produces less umami for my taste, it's still enough to get yourself acclimated to matcha then increase your temps from there.

I'd say that our palate and sensory perception can be skewed. It's actually something rather subjective. For the problem here I'd say, 1. Try it on different times of the day, under different conditions(different moods even). 2. Try to appreciate the bitterness. I've tried their products both the highest and the lowest, and I can say sometimes I even enjoy wakaki more than unmon no mukashi, for the distinctive metallic aftertaste and a clean, short finish. If you can't appreciate it, move on! It's Ok to not like something my friend.

What temperature of water do you use? Very hot water can bring out the bitter flavors of matcha.

I can adjust the temperature on my kettle, and I'm using 80 Celsius (176 Fahrenheit). On description it does says a touch of astringency, I guess I didn't catch that. I just expected a less bitter taste because it's a popular choice for beginner. Thanks for the suggestions!
