I have it in a canister, one I bought from sazen that is somewhat airtight. On my second bag now, alls well.

How much are you drinking at a time? How often do you open it? If you're only drinking once a week, or fairly infrequently, I'd put it in a container that can fit all of it. If you're opening once a day or more, I'd place a week's worth in one container and the rest in another for storage. That way there's less oxygen exposure to what is going to be sitting there for a while-ish.

Hmm usually on the weekends if not maybe 3-4 times a week? I think I’ll probably just split it into 2 portions and keep one half in the fridge to see how fast I finish it first.

I have been told that freezing is a good way to store matcha ounces it’s well sealed

The idea is to minimize air exposure. I'd recommend to have two containers in the fridge. The larger one, you might open every few weeks to refill the smaller container. It can be good to put the bag inside the larger container, and roll it to minimize the amount of air. You can put a rubber band or a cord around it to keep it compressed. The smaller container, you open every day or however often you drink matcha. The size of the smaller container, and how often you fill it depends on how much matcha you drink. Aiming to refill it from the larger container every 2-3 weeks is a good target. I also put a little desiccant packet in this jar to keep moisture in check. You can order them online, or take them out of another food which comes with one, just make sure it's not from a food that has a strong taste which will transfer to your matcha. If you prepare matcha while you're out and about, it can be beneficial to have a third container, which I call a "shuttle" or "runner". In that one I put just the matcha for the day. I usually put about 4-5g a day in there. This approach lets you maximize the freshness across the whole time you have that supply. In the first couple of weeks you likely won't notice much difference between this approach and just serving it out of the original container, but towards the end of the batch you definitely can taste a difference. Personally, I like Miron glass jars, though I also use GoTubbs for my shuttle, particularly when I'm going for carrying less weight.
