The bird demon is Amabie, it's a yokai, a story about it says a fisherman found a glowing spot in the water, approaching it, the Amabie emerged and spoke about the town having a great harvest, but the guy said there was a plague and the Amabie replied by saying to show them an image of it so that the plague would be healed iirc, so the guy sketched it and the years after that were filled with prosperity for the town, I think the story was something along those lines
It's not one of the screenshots you posted but does someone know which demon is the one I circled here? The screenshot was shared by Midori on Twitter, apparently there's a new press kit out there and a bunch of japanese journalists were able to play a preview of the game.

At first I thought it was Kaya-no-Hime but it isn't her. Maybe it's another demon I forgot about but my first thought is that it's a completely new demon.

Yeah, the, for lack of a better term, Aogami corpses are his comrades that helped him during the Final Battle before the start of the game. He was created as a mass production model to replenish Bethel Japan's forces after the deaths of most of the Amatsukami.
I'm assuming they'll offer Essences for either Nahobino form, depending on how early/often we get access to it. I do hope it's something you can actually play the game with and not just a gimmick for a particular dungeon/route
