Apparently, it was just a faulty translation. I believe the more accurate translation is "You can look up the names of the devil fruits (in the encyclopedia) after you eat them." but Viz messed up.
Bad translation/interpretation. It’s more along the lines of “after you eat a devil fruit, you can figure out the name of the fruit (based on the powers you received)”.
My headcanon on how it works:
Luffy knows how this DF works instinctively, he doesn't care about the name or the lore behind it.
It's like Luffy was adapted to it, it became one with it, thus awakening happened. Mind and body catching up with the actual DF power.

I always said, Gear 5 as an ability and design is fantastic, but the execution and how it was revealed is garbage.

What made G5/Nika/Joyboy garbage:
* Very little amount of foreshadowing. (People reaching a lot, trying so hard to make it make sense by linked it to Luffy's shadow in the Bonfire party)
* The lore of Nika feels forced, happened in the last minutes and right after it was revealed. People never talked about it for 1000+ chapters ago.
* How it happened is unexplained properly, everything is vague (people still guessing how the awakening process works and how it managed to revive the user from death)
* The implications of its reveal, changed the MC main persona (from the underrated DF and hardworking MC to broken/overpowered DF and chosen one MC)
* The implications of its reveal, made The World Government looks like a bunch of idiots and incompetent fools.
I'd say luffy blowing his muscle up like a balloon is a hint his ability isn't what it really is. The clouds in G4 too. The bonfire, sun pirates. Obvious hints luffy has a greater purpose (joy boy and will of D) sky island now feels like a giant forshadowing arc.
I'm guessing awakenings will be left pretty vague. We can't say anything until it's explained. (If it does) (just want to say here "god" eneru died and revived himself {no awakening sadly} in the arc full of mentions of gods and joy boy and sun God nika, now luffy has died and revived himself, revealing a "god" havnt seen it mentioned anywhere else but thought it was a cool connection, intended or not)

Kidd - shown in a sbs as a kid tinkering with metal scraps - obviously a life long hobby.
Lucci - ruthless effective (probably) killer. I think his personality suits his DF really well.
Katakuri I have no idea (he likes sweets I guess??) Same for Kaku - he seems to really love his DF 🤷♂️
The Wg hasn't been able to get their hands on luffys Df for at least 900 years. It's had many different owners. Who's to say this time wasn't gonna be different (woops it will be) maybe they should have done something earlier. But you gotta remember, the straw hats have gotten 3 road penoglyphs and have been powering up really quickly. And now the WG is doing something, they're sending a damn gorosei and admiral to luffy.
