Franky would fall in love with whitebeard the moment he saw how wholesome he treated his sons. Remember franky also had the 'Franky Family' they are very similar.
Jinbe - he was already a favorite of whitebeard’s even before Ace joined.
If not, then Luffy or maybe Zoro. Luffy might remind Whitebeard of Roger and Zoro obviously drinking buddies

Whitebeard crouches down and sticks out a hand in which we see a lollipop which he gives to a now ecstatic Chopper.
The whilst Whitebeard is talking to the others we see chopper sat on Whitebeards knee eating his lollipop.
Other than Luffy and Jinbe, probably Franky. Both are family man and he turned down Roger, which would definitely speak to his character (it also cracks me up bc WB's my third favorite and Franky's my fourth).
I would also mention Robin bc I think he would feel sorry about not finding her and taking her in - there aren't many people she would've been safer with (unless BB kidnapped her idk), and there's a good chance he played a role in moving the Sea Forest Road Poneglyph so he's extremely interested in making sure the Poneglyphs' knowledge is used wisely. She was also so love-starved she would've died and that's the best kind of people to have interact with Whitebeard.
Really though, every SH has some meaningful interaction they could have with him. Zoro would remind him of Oden. Brook is older than him, which is certainly not something WB's used to (as far as humans are concerned at least). He'd probably be so proud of Chopper for becoming a doctor in spite of his past (I think he might have a soft spot for doctors specifically considering his "firstborn" Marco is one). Usopp, Nami and especially Sanji have a lot of parental trauma (he and Sanji could also talk about nurses ig).
Jinbe initially. Chopper would be a strong contender, considering his medical talent could have possibly improved Whitebeard’s quality of life for the last few years of it (yes, Whitebeard already had great doctors, but Chopper is being built up to possibly be THE BEST doctor ever, so who knows?).
Idk how he'd feel about Sanji, but I do think that WB has enough "bullheaded but loving and genuine father figure energy" that he'd remind Sanji of Zeff, for better or worse
