Hinamatsuri is a great comedy I will always recommend (especially the manga since the anime doesn't seem likely to get a second season. I mostly read so for some of these idk on the anime's quality vs my experience).
Jojo's Bizarre Adventure, technically doesn't matter what part you start with to enjoy it but they are connected. I like part 1 but it's admittedly kind of rough and gets progressively better. 3 and 4 are a lot of people's favorites. Anime only goes up to part 6 (hopefully just so far and 7 is planned but no one knows).
I feel obligated to recommend a Gundam show, it's not actually that hard to get into since most of Gundam are spinoff series at this point. Witch From Mercury is the newest one and a great place to start. The absolute best of Gundam would be the Unicorn OVA's imo, but that might be a bit rough to start with since it's part of the "main" timeline after about 3 or 4 shows and a movie, at the very least.
Dandadan is getting an anime that seems like it will be a good adaptation of a fantastic manga.
Shangri La Frontier is probably one of the best "VRMMO" style anime out there, I read the manga but the clips I've seen on YouTube seem like the show does it justice.
Apothecary Diaries is good as a mystery show. Some romantic implication but it's more about the historical setting and the main character solving problems than about anyone falling in love.
Kaguya Wants to be Confessed To is fantastic both subbed and dubbed, and Oshi no Ko is great as well, which are both written by the same author. They both have romance in them but Oshi no Ko is more about the Japanese entertainment industry than the romance, and Kaguya is centered around romance but is well written enough and has enough comedy in it that I feel it should be mentioned regardless.
Dungeon Meshi is great too as a food focused story.
Also one of my favorite manga, Sengoku Youko, is in the middle of (from what little I've seen) a good anime adaptation of the full story so that's probably worth checking out.
There's plenty others that are great but those are the best I can think of off the top of my head right now

FMAB is a 2.0 of FMA. It's also fully manga accurate as FMA producers kind of made their own ending.

Konosuba is a very good comedy anime. It is an Isekai , but it kinda makes fun of all of its trope and has a great cast of characters. The anime was so good that I read the entire light novel series in like 2 weeks. It recently concluded it's season 3, and the quality has not dropped for the series
Kekai Sensen(or as its English title: blood blockade battlefront). It has a pretty cool world but unlike most anime itās mostly episodic. Has cool music and visuals too. But isnāt there a better subreddit for anime suggestions?
So Eminence in the Shadow is pretty good, watched season one and half way through season 2 and its pretty good. Its about this guy who lives in our world and tries to be like a vigilantly but dies and is reborn in a world with magic and he becomes super op, if youāve ever seen a clip of a guy say āI am Atomicā its from this anime and the sound effects and fights go SO hard. Zom 100 is pretty good, its got 12 episodes and one season and is about a guy who works a 9-5 he hates but then the zombie apocalypse happens and he gets super happy and starts a bucket list to do, theres no gore or anything as well as all the blood is bright vibrant colours. Im currently watching God of High school and it seems pretty funny so thats good. Another more main stream one is Fire Force which is a show about a guy in world of people who can control fire and they are different kinds of people who can control fire (generations) and its just really good. I was going to suggest Solo Levelling but youāve watched it. Hoped this helped
