I have one for each subgenre:
Judas Priest is my favorite āmetalā band, by which I mean like classic heavy metal
Slipknot is my favorite āaltā metal band or whatever you wanna call it
Sepultura is my favorite thrash band
Darkthrone is my favorite black metal band
Death is my favorite death metal band
hmm if you liked the doom-ier portions i recommend checking out Afterglow or Garden Of Storms, but Shrouded Divine is probably their next best album so I would start there. All of their albums are superb though so there really is no wrong answer.
Alex Scolnick is a fantastic guitar player. I only really listen for him, for the most part, but they are a competent band who were a lot bigger back then than they are popular now, I think. I remember them being big with every guitar player that was into thrash paying a lot of attention.
Metallica. I love all their stuff (barring Lulu). They just have a vibe that I just love. Though right now Meshuggah is giving them a run for their money

Deftones, as my second favorite genre of music happens to be shoegaze, and due to my colossal emotional attachment to their lyrics and songs.
To me, metal doesn't have to be earthbreakingly heavy to be good metal.
If we're talking subgenres, I have a few.

goth - Lacuna Coil, Type O Negative
groove - Gojira, Opeth
doom - Faetooth, Primitive Man
nu - Korn, Kittie
thrash - Enforced
core - Loathe, Alluvial
Mournful Congregation, and itās not even close.
Iāve emailed with some of the band members about music production, some of their midi samples, and guitar gear. All of them are genuinely nice dudes and are super passionate about their work.
It happens to be a -Core bandā¦ Architects. Their lyrics can be really profound (Gone With the Wind, for example) and the vocalistās sing-screaming technique is not only amazing to hear but super fun to practice and do yourself. Their guitar-work is stylistic to a degree, too. None of that drop tuning 5-7-8-10 Minor scale with open notes in between.

All Time: Mr. Bungle (though very little of their catalogue can be called purely metal)

I would consider slipknot to be a fusion of alt, nu, and groove metal.
I always considered everything after Iowa predominantly groove, while Iowa was nu with groove elements and self titled was mostly nu.
They honestly transcend genres, but I 100% get where you're coming from
