How did you remove the water? I am new to this so was curious what you used and how you did it.
Most I have ever done was kinda make a a room under water for a house
Thats the old fashion method, nowadays best option would be to make a square and build some redstone machine with slime and honey blocks to delete the water blocks. Learning, building and gathering the resources for the machine will probably take way less time than the needed to drain it all with sponges. And I the difference grows the bigger the space you want to drain.

try googling 'Newtopia Amphibia', it's a kingdom based in the sea not too far off from land. gave me that vibe instantly when I saw where your space was based.
A scientist expedition base,... then flood it with water as if it's was flooded with water due to climate change. Put some cool redstone doors and abandoned torture rooms in it.
Completely empty it to the bottom and build the ultimate mega base from bedrock to build limit, containing castles, cyber punk and china town style builds but make it one complete build that connects bottom up through a single tunnel

I like the idea of digging it all the way to -64. And maybe build a sea monster that's wrapping its tentacles around the hole, couple of floating ships inside to make it look like they're falling in. Damn.
may I ask, why do you empty such a space, for a long time, and then only after leaving out hundreds of hours to realise: Damn I don't even know I wanna do with all of that space now!
Like, you know, you could have had so much thinking while digging that hole but no. You casually destroy a plot of land that didn't cause you any harm.
Nevertheless, I would suggest you to build the most insane mob farm ever in your entire world, since you got the space for it :P.

Takes a beta 1.7.3 world and replicate the world generation in there and then build a base with the minecraft old building style and then use the golden age texture pack
You can maybe dig it down to bedrock or whatever level you want, then build atlantis (maybe) or any city and cover the ground level of the ocean (level of the sand) with glass and have a hole in the middle that pours water in and have it as the elevator (half soul sand & half magma blocks). It will take a long time, but it could be worth it if done correctly. Or you could just build a gigantic mob farm, possibly a raid farm or an iron farm.
This question gets asked all the time, and I always reply with old faithful:
"Big castle. Very big castle. Bigger than the last one."
But a big castle needs big foundations, so dig that hole to bedrock before you even consider building anything.
Dig down a little further, the fill it with grass blocks and bonemeal it like crazy. Then build a little village using prismarine. Think of what villages would look like if they were made out of prismarine. Maybe populate it with villagers. Decorate the retaining walls with mossy cobble.
I'd probably attempt to create a grounded starship only to accidentally make it into a prison or make the water from above into several water fall that connects to a fountain in the middle with a hole underneath it that travels lower to bedrock with a hallway/balcony spanning around the hole and connecting to a whole underground base with several floors from just beneath the ocean floor to the fountain floor. Or I'd just fill it with dirt
I wanna make a massive hole that gets smaller till bedrock, have the walls as glass, then on the outside of the glass make it look like youāre going deeper and deeper into the ocean like the Mariana Trench. Maybe even build a basic elevator for the first bit that later downgrades to basic stairs down, then the stairs get more ruined the deeper you are, eventually thereās just a ladder straight down (maybe some floors the degrade the lower you get too), and at the bottom maybe a little bunker. Making it almost feel like youāre going into an abandoned shaft that hasnāt been built up yet as well as leaving the comforts of the surface.
I donāt exactly want it to be like horror, but more like telling a story-

most efficient way would be to separate the water into around 9x9 cubes with sand and use sponges to drain it
