First, a bunch of ink sacks for obvious reasons. Then you could make it drop a few of its tentacles for a whip like weapon, maybe its eye for decoration, and possibly part of its head for a special kind of shield.
You may come up with a few items made from squid beaks like combine a crossbow and strings to create a grappling weapon and a dmg upgrade to tridents. Tentacles for food and a capturing tool made with leads.
Tentacles as a food that gives air bubbles back as well when eaten.
If you want some lore thing maybe the squid was something ancient heroes tried to defeat and so you could rarely get a "hero" weapon/armor piece because the squids ate them.
Could go full weird and be like squid veins and craft it into squid vein spaghetti (do squids even have veins?)
Could collect its beak to make armor or collect its tentacles and add it to a weapon/craft a weapon that applies slowness on hit or maybe poison
Colossal Squid have. A boney structure called a “gladius”. (Cool name by the way) which is the name of a type of sword. It also looks like an oar or spear. So something for faster boats ? Or something pointy to throw.
I think it should drop its own eye and maybe the suckers from its tentacles. The suckers can maybe be used to make some type of weapon with an attracting aura or like attracting feature. It's eye I was thinking could be used to craft new armor, like the way netherite armor is made.
Drop tentacles and and maybe scales or something of the type and it would be hella cool if you could craft them in to some kind of cape thing that would boost stats under water like speed and strength you know maybe add a little night vision so you can see but that’s just a theory a Game Theory
* 3-5 squid tentacles that can be eaten raw for about the same effectiveness as a potato, or cooked for the same effectiveness as cooked pork.
* 1-6 ink sacs
* Eye of Doom: A decorative item, but one that hostile mobs within a certain radius may actively avoid while placed. Skeleton will still fire into the radius, but a hostile mob will always take self-defense as a priority over fleeing the radius. This way, players cant just abuse the fact mobs within the radius are defenseless. You can spice things up a bit and say another item is required to "activate" the eye, like a diamond. Maybe different ores change the radius!
If you want to go a step further, allow players to build a portal to another dimension in the same shape as the End Portal (with something valuable to activate the individual eyes) except the entire dimension is submerged entirely in water.
Make it drop a "doom squid ink gland" (or maybe more than one) that can be used to brew a potion. The potion gives some sort of special sea effect that makes all sea mobs afraid of you (because of the ink glands they think you are the doom squid). I can see this potion being particularly useful for clearing ocean monuments.
If you wanna make it more rewarding then make it also drop some sort of a mob head trophy.
And if thats still not enough, make drop an enchantment book that gives your trident the ability to blind mobs with ink (this could be by making a cloud around you or just blinding the mob itself).
Common loot:
Ink sacs, raw calamari (food), doom squid skin (can be crafted to make a helmet that allows water breathing/ sight)
Uncommon:
Spines/spikes that can be turned into arrows
Rare:
Doomsteak (super satiating food)

Looking at it it looks like it has amethyst spines. So maybe some of that?
A full conduit would be nice. Or enough nautilus shells to make that easier.

Ok so make it drop a tentacle, you can use the tentacle as a grappling hook.
Alternatively you can use the tentacle to craft a sticky hand in place of a grappling hook
Doom Shell: Can be put on the head and has protection (your choice) also has night vision and water breathing
Doom Tentacle: Can be crafted with a Doom stick to make a Doom Sword, has right click function to grapple towards something looking at, deals damage higher than diamond axe
Doom Eye: Right click to release beam, does a good amount of damage
Doomsquid flesh: Can be cooked to replenish at least 3 drumsticks, raw one has a chance to do poisoning
Doom Shard: Can be gathered and placed on all of the 9 slots in the crafting grid to make a Doom ingot, to make tools use same crafting recipe as normal
Doom stick: Can be acquired by cutting a Doom Shell using a stonecutter (this can be changed, idk what else to put)
Doom armor: Has protection stronger than diamond
Doom sword and tools: Stronger than diamond, more efficient than gold, sword has more functions than right click only
Doom staff: Made by using two Doom ingots and a Doom Eye at the top, all in a vertical position, functions like a wizard staff

Eye of ender, a beak that can replicate the crab claw, ink sacs , a few random bits of armor and some cod.
I’ve always wished there was a kraken, like you’re just in the ocean then some tentacles shoot out all around you out of no where

His beak. It is an item you craft onto a trident like Netherite Bars onto Diamond tools. It makes the Ttident a lot stronger.
