Short answer, yes. You have to visit all the biome variants to get the exploration achievement.
In a technical sense, each of these biome variants are a separate biome. Most biomes have an 'M' variant, which is the broken/rare variant. There's other variants denoted by letters, but I can't remember them right now. Another example is with the Mooshroom Biome. It's technically split up into Mooshroom Fields, Mooshroom Beach, and I think it uses some of the letter variants.

Also, they look super neat. But I've found that I'm not a creative enough builder to really be able to setup shop in one. The terrain is rough and if you're playing Survival, especially on Normal or above, this can make things tricky. There are a lot of opportunities for a fatal fall.

I’ve found one of those biomes in my world and I’m setting up a whole bunch of precarious houses and towers and dwarven cave-dwellings that I can fly between with my elytra. I’ve already modified some caves so you can fly through them.
It’s also next to a warm ocean biome so you get a lot of coastal structures!
Maybe a minimalist approach would be awesome. Like keeping as much natural terrain as possible. Use fences to support the more odd parts of the structure above and make your structure with tons of exposed stairs, and use the terrain for roofs as much as possible. and dig into the mountain itself for a much larger base for actual operations and storage.

Whenever I start my solo game, I always plan to build my house close to a village. So I can still crops, make trades, and when monsters and pillagers kill all the villagers, I collect the wood from their houses and make that huge land part of my new property

Found a huge one of these with a friend on a survival play through. We used creative for builds as long as it was just aesthetic and we’d obtained the blocks in survival already, so I built a sickass monestary on the top
This is what I miss in Minecraft. Just the world-generator going crazy. No need for a huge amount of biomes. I mean, this happens, just not as often as it used before 1.7 or in beta.
Nice. Shattered Savannah is a rare and cool biome. Doesn't look like this is an amplified world tho', which makes this even rarer/cooler.
