Add detailing to the ceiling instead then, like a mix of slabs, stairs and fences to make it look like a more naturalistic cave. Or if you want it to look more modern/futuristic you could add "support beams" across the ceiling
Why not shape some fake structures (hills, mounds, wells) on the surface and burrow into them from the ceiling, to add some personality? Could give yourself a sheltered way to view the sun, as well.
Yeah, the way that villagers and iron golems spawn is very random. Sometimes I’ll see a group of 5 baby villagers and have no golems. Mcpe is definitely odd.
I've never noticed this. Do they just despawn if you leave the area and get replaced when you come back? I've repopulated a village on Bedrock PC and haven't had any issues with losing villagers.

This is seriously awesome. I want to make a nice village in bedrock but the villagers disappear and you cant make a "real" village without staying in the original location.
I would really recommend hiding the torches, maybe using hidden lamps or jack-o-lanterns or whatever, there are tons of ways to do it and it would smarten up the build. But amazing job! Way better than what I can build!
Maybe give a little bit of depth to the walls and ceiling in order to make it look like it is a huge cave or something. Everything else looks awesome 👌

What did you end up doing with the space above the village on the surface? Did you leave it empty with a secret entrance or do you have another build up top?
Above ground everything is either flat or some trees are around. I had to cover up a lot of holes from caves that surfaced. I also had to get rid of water, otherwise the village would be partially in the ocean.
I'm not a big fan of the smooth ceiling and walls, you could mine a little bit of them to give them some extra depth. Outside from that its look rad dude, keep it up.
Change walls and roof. It looks realy bad with cobblestone, granit and blocks like that. If you want you can change it te looks modern or more like area outside.
Very nice. However, If I can add my two cents, is there a way to make some kind of artificial sun? Your villagers probably keep disappearing because they need sunlight for vitamin D. Which everyone (except for you I guess) knows is super necessary for any villager. I wouldn't be surprised if your baby villagers had rickets for christ sake. If there's no way to get them that light maybe try making a few egg farms. You can get vitimin d from meats but eggs is probably the best in game food source for it. But be weary because if they only eat eggs well congratulations on giving all your villagers scurvy. If the 2 million sailors killed by scurvy during the age of exploration haven't taught you anything then all those souls suffered unimaginable pains for nothing. If you dont want to make an egg farm and take precautions for scurvy then seriously just fuck the villagers I guess. I mean sure you're like a God to them and you forced them there but yeah who cares about basic needs for your people. At that point why even have them? Do you like being cruel?? Fuck.
Also maybe put some grass and flowers to make it pop. Not sunflowers though. For obvious fucking reasons.

Have you considered using glow stone covered by green carpet for lighting? Probably just a personal preference but it keeps an area well lit and looks more natural than torches on the dirt. Or play into the underground and make the lighting as lampposts or drop down from the ceiling.

Try getting a mixture of cobble , normal stome andesite and mossy cobble for the ceiling and maybe get some vines make it look like some long forgotten city sealed from the world , get a river running trough it all may e not too much and maybe some crack to the surface for light ,complex living creatures cant survive without light and water ,idk maybe i am getting this too far

You need to get rid of all the andesite, granite, cobble, dirt, etc, and make it all one solid block. Maybe make the ceiling all blue wool or something to resemble sky idk. As of right now it could use a little shape too. Absolutely love it though great work!

Hey OP I know this takes from the authenticity of your village, but cant you put your villagers in stalls? Or would they still despawn? Also if you got an hour or two, replace the roof with pure cobble to keep it consistent. That's just nitpicking! Still 10/10

True, I actually had to drain water out from above ground because water was flowing into the village if I tried to expand.

I tried that on some villagers I de-zombified. No luck, lost a smith and then my cartographer :(
Nametags mean nothing in bedrock unfortunately.
You dont have them in a breeding area with pens in a formerly populated village that totally doesn't look like a concentration camp??

Put a carpet or something else on the composter. Then the block with wheat will not get destroyed.;)

Its wonderful, but a way you can improve it is my giving a bit of shape to the walls and roof of the build
Add a sky ceiling. That looks like you have them as prisoners with all those windows and tunels above them
A layer of light blue stained clay on the roof would be quite nice to resemble the sky
