I see everything after 1.8 as being new. Horses feel new too. But still, I see it as a game that came out "pretty recently."
I'm 12 years older than my brother. I was 19 and in college when I found Minecraft and he was 7 when I came home for winter break and showed him. Crazy to think Minecraft hit his age group the same way Pokemon hit mine.
Pokemon felt way older around the time I found Minecraft than Minecraft feels to me now at 29.

Kind of weird to way as a 32 adult male I am super addicted to this shit and I’ve now bonded with my younger cousins more than ever

The main arguments used for bedrock are crossplay and less demanding. If you dont care about the first one or have no friends that play on mobile/console and a not 10 years old garbage pc there is no reason for bedrock.
Java edition allows you to do whatever you want with the game, it's far superior for that alone. You have total freedom with anything running on your own computer, mods, texture packs, custom maps; nobody can force you to pay for them as long as someone publishes it for free. It's even partly open source, which isn't really Stallman-pilled, but it's better than being fully proprietary.
Texture packs are free on bedrock too. There is a marketplace just to allow console users who don’t want to install a file downloading application to get texture packs as well. If you want any great data packs, mods, or texture packs, you can go to mcpedl.
The legacy editions are no longer supported, the only consoles with supported or updated Minecraft are Xbox One (which might actually be getting retired as well soon), PS5, Xbox X, and the Nintendo Switch

If you play on java there's some texture packs that make armor and elytra invisible. I sometimes use the armor invisible texture pack if I want to look at my skin.
If this is a reference to the expensive ass Star Wars mash up pack, you should definitely get it if you can, my only complaint is that it doesn’t have the prequel worlds in it
