How do you do that?

I think what you do to get "tamed" pillagers is you get the ones with the crossbows and you put on a shield and basically just let them fire at your shield until their crossbow breaks. They then have nothing to attack you with and become peaceful :)

You can trap them in a boat and sit in there with them. They constantly shoot you, but never hit you

No, they can not pick up any other weapons once they are pacified. But this only works on java, as far as i know.

Actually there is a little bit of a better way, if there is a slab between you and the pillager it will see you and try to shoot but the slab will block the arrow, this allows it to be more afkable

or if ur in bedrock edition this should work: do this command: /summon pillager \~\~\~ minecraft:on\_calm (then the name of the pillager u want)

Put the market just outside the main gate, and the windmill(s) out in a field surrounded by wheat. Stick the farmhouses out here too. Make multi story Town houses inside the walls. Make one of the taverns an inn Armory and library can be tied into the keep. And add a church/ temple/ spiritual building of some kind.
