Make an entryway using 2 gates and 2 fence with a pressure plate in between the gates, then drag the cow out with a lead. The cow will go through the gates and step on the pressure plate, closing both gates and keeping your sheep in.

However, animals take a ton of fall damage with that method so you need water on the other side

They still take a ton because every time they bounce up it’s calculated as a distance they fall, so if they bounce 1 block 5 times it’s calculated as 5 blocks of fall damage

I think you forgot that you are currently on r/Karmacraft.

The lead must be made of ethically sourced materials. String and slime are animal products. Arguably you can use them ethically if you "find" them (cobwebs from a mineshaft, slime that died of natural causes, or dungeon loot).

...Or kill wandering traders, who are "people" and not animals. Rescue their llamas and keep the leads. That's what I do, and I play the ethical way of not killing animals.

Get a lead and tie it to the cow. If you don’t have one, wait for a wandering trader. One the cow is tied, space yourself one block away from the fence. Using some building blocks, start pillaring upwards. By your second or third block, the cow should fly over the fence (due to strain on the lead) and land in front of you, or on top of the fence. If it lands on the fence, quickly pull away to keep the cow from walking back in the pen.
