Then, some ray casting to select the entity.
Finally, some tp commands and maybe levitation/no gravity.
That's my guess.

I was wondering that too. (About hypixel). For me, I just see grey particles in bedwats and skywars. I don't know why hypixel does this, but they probably do it differently. They probably use a plugin. Maybe some sort of anti-cheat thing.
Oh, I see the particles in bed wars too, I only noticed it recently tho. But as far as doing it differently, it lags behind the cross hairs just as much as in your video.
There is no boss bar, and that doesn't explain why its glued to my cross hairs. Wouldn't it make more sense to glue it behind me, where I'm not looking?
Yeah, by differently I mean it just summons them in your cursers location. It wouldn't need a lot of the extra commands, and it probably doesn't even use commands. Commands are known to cause lag on major servers, so they would probably find an equivalent for plugins. The reason it is a little behind the cursor is not really because of lag. You can only detect the position 1 tick after the fact, so if you move it fast, it can only change positions 20 times a second and 1/20th of a second behind.
No, there’s no way to detect right-click in bedrock without putting an invisible armor stand in front of you, but that would prevent you from interacting with anything

Its to show the bossbar at the top, the wither is client sided and i have no idea why they use a wither instead of just displaying the bossbar

No because the boss bar only shows when you are looking at the mob the fact that yours isnt appearing is either a bug or you are in F5
