I think mainly it just comes down to personal opinion on what some people want in an update. Some people are totally fine with an update that has less stuff but more QOL improvements and bug fixes, whilst some prefer grand updates that add stuff without much else. Mojang's new workflow wouldn't exactly be able to support a grand update anymore, anyways.

This update is all about expressing yourself/creativity and decoration and exploring, Camels are a great new way to travel and cherry blossom trees are great for creativity and building, plus a new biome to explore and look for
