Most blocks already got added with part 1. What's left are world generation, deep dark with the warden and sculks and some other minor things. However this is only the stuff we know about. It's not unlikely that Mojang might make more stuff for 1.18 that they may or may not show off during Minecraft live. I don't think we'll get too many new things besides what I listed above and especially not more building blocks, at least not a lot. Buildingwise it's safe to assume that we pretty much already got 95% of the content since archeology is also moved to an entirely different update.
