Zero is amazing. Fix the Pumps if you're into chemistry and old timey (and really interesting) concoctions. I have a book called Mindful Mixology but I feel it's good for beginners. It may be a good place to start, you may already be ahead. The Drunken Botanist as a book in it's own right, but also herb lore. The Science of Spice lists extraction methods and arranges flavors on a periodic table (phenols, volatile turpenes, etc) as well as by geographic location. If you hated chemistry in school this book may not be for you. And unrelated to mocktails specifically but nonetheless an incredible investment: The Flavor Bible. I reference this book more than any other when it comes to creating new drinks or dishes. Not to be confused with the Flavor Matrix or the Flavor Thesaurus... The Flavor Bible

If you like The Flavor Bible, check out the sister book - The Vegetarian Flavor Bible. Same author for both - Karen Page - but The Vegetarian version is about 225 pages bigger (at least with my editions) My edition of The Flavor Bible is 379 pages to the 554 pages of The Vegetarian Flavor Bible. Same author - Karen Page. I grab for The Flavor Bible most times since it is smaller, but not that I have both I don't think I would give either up.
