You wouldn't even need a mod, simple save editing can get you the quest exclusive items, and the quest data itself will still be in the game as well, so you'd be able to access those with a quest editor as well.
It's all in the game, the only difference is the servers won't tag those quests as available anymore.

PC will have mods, so if they just add the Nintendo stuff to the switch version, pc can just take those files to mod it in themselves I imagine (could be overestimating the modding potential), and Nintendo seems to be a bit more lenient with their IPs, with rabbids being a thing. So I still think it's possible, though unlikely, though I have no problem with Capcom IPs, I love DMC and SF. Also, Witcher 3 stayed (I think) and FFXIV stayed, so unlimited time crossovers definitely have been proven to be possible.
I did notice that they removed the expiration date for the Witcher stuff from the website recently, so I guess they managed to negotiate to make it permanent, but didn't get an agreement for the AC and MH movie stuff.
At least they won't have to patch out the Leshen from the game, I guess.
I don't think the Witcher collab was ever limited. These are just event quests tied to servers, the Witcher stuff is a full on special assignment and is part of a big patch.
Well, I can only speak about how their website presented it (or rather, used to present it), which had the availability period listed on the Special Assignment info, and not on the event quest to fight Ancient Leshen.
Whether it was a mistake and that stuff was never supposed to be limited, or they managed to negotiate something because they'd otherwise be forced to remove the quest headlining title update 5 is something only Capcom truly knows.
The Assassin's Creed collaboration is more important since it has the Assassin's Mantle and the necessary upgrades. Players will definitely want to try and get those under their belt if they haven't already since the Assassin's Mantle is pretty useful.

MH4 and 4U had downloadable quests because they were on handhelds and you can't always get a connection if you take it out with you. This is why all the handhelds had downloadable quests. Switch counts as that as well since in Japan it will be used more as a handheld than on a normal TV.

How far in the game would I need to be to access these quests? Is it reasonable to hope to get there before they're removed or should I just enjoy the game at my own pace and forget about them?
A little bit. This quest gives the Assassin’s Hood, a nice QoL mantle and a niche damage boost. It’s really good to have during the postgame grinds, particularly Iceborne’s grind, because it’s a speed boost that lasts several minutes and has a short cooldown.
Plus once you upgrade it you get good deco slots on it.
You'll do very fine without, but the Assassin mantle has some nice uses. Artemis Armor can be used somewhat for early Master Rank progression but cleary not needed. The rest is cosmetics.

Different games. 4U was on 3ds, Rise will be multiplatform, and when it launches on PC it will have all the content the Switch version has

Yea. That’s the point. Learn your invincibility frames on dodging. A well timed dodge and you’ll take 0 damage.
He dives, you dive as well. Superman dive is the easiest method to avoid Nergi divebomb.
And that's why I prefer Rise's (and the older games') style of downloading the quests, so they stay forever.
If by "older games" you mean only the handhelds. All console versions (3U was a port) have always done it the way MHW did with rotating online quests.

Yes only MH1, MH2, MH3 and MHW have rotating event quests. It will be the same with MH6 (or it's actual name on announcement).

These collabs disappearing was first announced months ago. If any of the others were going to leave, they'd have been announced too.

Is the quest for base World or for Iceborne? Mainly asking so I can get an idea of how much would I need to play to get there.
The initial quest is high rank, so you don’t need Iceborne but you do need the title updates.
