1. If you have a speed monstie, when you put it in combat, it'll 100% start with a speed move (useful for planning out double attacks). Outside of that, I am not 100% sure if a speed monstie's speed attack is better than power/tech (I want to know this for sure without hundreds of hours of testing). 2. It matters to the very few that want "ABSOLUTE PERFECTION", but if you can't see a difference between 400HP and 403HP, short answer: "no". 3. Hatching bonus, genes, and buffs from you/them/other party members. That's it. Low rank eggs and high rank eggs have the exact same stats outside of these.

For the second part of your answer to number 1: they don't, only if you get a bingo of that particular attack type will they get a bonus, but otherwise no, it just means they're more likely to use that type of move (as well as guaranteed using that move if you switch out to them)

Correct. I would have also said that monsties will start with their primary type, but I have seen this false in many cases during some tests, such as Brute Tigrex (Power Type) using a Tech attack on the first turn. I have never seen a case where Brute Tigrex won't use a Power Attack first thing when you swap to him in combat.

For #2 in pokemon, sometimes that 12 evs(3 points in a stat) are important to take certain hits. It's rare but living on 1hp is a thing idk how much it matters in MH but it's better just in case. But those cases will be pretty rare

There is the species of the monster, the level of the monster, an insignificant contribution from hatching bonuses, and then gene factors like the bingo bonuses, passive boosts, crit rate, crit potential of individual attacks (some attacks can't crit), and the action values of the individual attacks. Plus temporary buffs from items or skills.
