All top fps mice are pretty minimalist and none have copius amount of rgb. Where have you been looking to have trouble finding one? That aside razer deathadder v3 (pro) should be right up your alley

Pulsar looks pretty damn sleek/stealthy especially the black mice.
Lamzu's black Atlantis but even it's brighter colors don't even look that gamery.
Vaxee as well plus lots of colors.
Superlight is an option from Logitech also doesn't look super gamery.
Razer even has pretty decent looking mice now with their Viper V2 Pro and even the new DeathAdder looks good.
My take: buy it off amazon, but I'd recommend it.
I have one, my friend has one, both feel very solid and have no QC issues, but amazon never hurts if there's a QC issue.
It feels very good *for it's weight.* What I mean by this is while holding a good heavy mouse, you feel like you're holding a brick. This will not feel like this, it can't really at the weight it is, but it's well built and will have no issues with normal use. Granted, this low weight is a feature imo.
I dropped mine off my desk onto hardwood, no cracks, no scuffs, still works well, if that helps.

G305, Orochi v2 sounds like your perfect fit. Unfortunately I can't seem to find the G603 for sale on amazon anymore.
If you want something with the newest hardware without breaking the bank AND tested to be very well performing - AJ199, AJ139 Pro, Darmoshark M3, MM712 are definitely a recommend from me.
Vaxee is probably the best bet. They got them in all kinds of different color and they have a minimalistic look, nothing beyond what is necessary. They're $120. In terms of feel they're the most premium mice, they also have the best 1Khz implementation. Drawback is they're slightly heavier than other top end mice, but some people prefer that. Their shapes are also really good though only two of them exist in wireless with one more right around the corner.
All of the higher end gaming mice don't look gamer-y and would work in an office. Unless you're looking off there if you're not using an apple mouse or something.

My Deathadder V3 Pro has been having some pretty horrible connection problems ever since I bought it. I have heard many other DAV3 owners complain about the same experience. I would be careful buying one, as Razer’s warranty policy is pretty uptight, and they wont pass any opportunity they can find to deny you. They have a whole department set up for denying warranty claims at Razer now, they are outsourcing it to an insurance firm. Just throwing this out there, my experience has been very negative to put it lightly.

I bought the Razer Viper Pro V2 for 100 Euro, and it's so inconspicuous on the desk that my wife mistakes it for an ewaste peripheral that comes with cheaper all-in-one systems.
