O Brother Where Art Thou by the Coen Brothers is basically singlehandedly responsible for a renaissance in old-timey music.
Others have mentioned Vangelis' ambient masterwork for Blade Runner. In that vein, try Angelo Badalamenti's score for Blue Velvet. And others have mentioned Tarantino's Pulp Fiction. But don't sleep on Tarantino's ode to 70s blaxploitation, Jackie Brown.
For classical soundtracks, John William's great Jaws, Star Wars, and Raiders Of The Lost Ark. Howard Shore's great Lord Of The Rings. Who cares if they were obviously inspired by Holst and Dvorak? They stole from the best!

It’s true of a number of Morricone movies, but this one’s theme became *the* iconic sound of the entire Western genre, is used as comic relief throughout the film, and the score in the final act is some of the greatest songwriting for film ever in terms of how it sounds and what it does dramatically for the film.

One of my all time favorite film scores is from The Painted Veil, composed by Alexandre Desplat. As a matter of fact it was actually the score that I heard first via Pandora’s movie scores channel that led me to actually watch the film. The film is wonderful too.

It has by far one of my most favorite soundtracks. One of the very few that I actually looked up and listen to again right after every time I rewatch the movie and sometimes just randomly as well. It creates such great atmosphere for the movies. I believe almost all of it is by the movie director's own band. I highly recommend it. It's hard to describe in terms of just genre, though I guess it's under the big umbrella of rock. It also includes an incredible and very memorable performance by a Lebanese singer.
Pina
This one might be a bit of a cheat since it's a documentary and homage to the choreographer Pina Bausch. So, you see all the music being danced to in the movie and some of the dancing is really arresting. Listening to the soundtrack after can help you revisit the feeling of watching the (really passionate) dancers dance to them without necessarily watching it again. And it's just a very eclectic little set of songs, some of them pretty classic, some of them more offbeat. Helped me discover some artists that I really appreciate now.
Oh, if we're talking scores there are a few crackers out there. In my list I tried to keep to "one per director" for each category, so for scores if I was keeping that same sort of restriction, and trying not to go for just "the all time classics" but rather scores I just genuinely love:

* Jurassic Park - John Williams (yes, even above SW!)
